IRISH SODA BREAD WITH CURRANTS
Ingredients:
4 cups all-purpose flour
4 Tbsp. sugar
1 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
½ cup (1 stick) butter, softened
1 cup buttermilk
1 egg
1 cup currants
Topping/glaze:
¼ cup butter, melted
¼ cup buttermilk
Directions:
-Preheat oven to 375 degrees. Spray baking sheet with non-stick cooking spray
-In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and softened butter. Stir in egg, buttermilk and currants.
-Turn dough out on floured surface. Knead lightly. Form dough into a round shape and place on baking sheet.
-In a small bowl, combine melted butter and buttermilk. Brush loaf with mixture. Use a sharp knife to cut an ‘X’ into the top of the loaf.
-Bake in preheated oven for 40 to 50 minutes, or until a toothpick comes out clean. You can continue to brush the loaf with the butter mixture throughout the baking process.
-Serve with Irish butter and jam.
