June 27th: Rib roast and whole new potatoes

FOR THE ROAST --

The roast needs to be at room temperature. First, rub olive oil on the roast and sprinkle liberally with a salt and pepper mixture.

Place the roast in an aluminum roasting pan and put on grill.

Cook indirectly with the grill at about 350 degrees.

IMPORTANT: When done cooking let the roast sit for 20 minutes to let the juices contract back into the roast.

Use an instant read thermometer to take the temperature of the meat.

Use this chart to cook to desired doneness:

Rare
120 to 125 degrees F
center is bright red, pinkish toward the exterior portion
Medium Rare
130 to 135 degrees F
center is very pink, slightly brown toward the exterior portion
Medium
140 to 145 degrees F
center is light pink, outer portion is brown
Medium Well
150 to 155 degrees F
not pink
Well Done
160 degrees F and above
meat is uniformly brown throughout

 

FOR THE POTATOES --

Use canned whole new potatoes (found in the canned vegetables section).

Place on skewer and grill.

Last 5 minutes, baste with melted butter OR olive oil.

Add salt and pepper or Jonny's seasoning mix.

CAREFUL with the melted butter, as it can cause flare ups!
