SPOKANE -- Through the years Hoopfest food vendors come and go. But for one local mother-daughter duo, they are hoping their concept sticks.
Many people come to Hoopfest not just for the basketball but also for the food. Less than two weeks ago Mommy G's opened up its windows to much fanfare. The locals say they can't get enough of the food.
Jessica Rapp and her mother, Christine, are behind the concept. They are serving up gourmet grilled cheese sandwiches to go and more. Rapp said it was always her dream to open a brick and mortar restaurant. But doing so would have cost her hundreds of thousands of dollars.
In recent years, food trucks have been popping up all across the country. Analysts said it is because many are hungry to work for themselves. It's a huge risk with the potential for big rewards. Rapp is giving it a go with the support of her family and friends.
"I'm a single mom, with five kids, five boys, and this was an opportunity for me to change me life," said Rapp.
With Hoopfest ahead, the mother-daughter duo is hoping the community rallies behind them. Mommy G's has extended its hours because of Hoopfest weekend. The family said they are grateful for the support they have received.
