WORLEY—The executive chef at the Coeur d’Alene Casino Resort will be showing off his cooking skills for industry experts in New York.
Adam Hegsted will serve as the guest chef one night in June for the James Beard House in Manhattan. The dinner is for up to 80 guests and it will feature his menu exclusively.
The Coeur d’Alene Casino Resort hosted a showcase dinner Thursday. Chef Hegsted prepared the dishes he plans to serve to guests at the dinner. The menu included 60-day-dry-aged Ellensburg Lamb with Idaho potato gnocchi, nettle pesto, wild mustard, and lamb bacon. Other menu items included applewood-grilled quail with rhubarb barbecue sauce.
The James Beard House hosts frequent dinners featuring selected chefs working in the Beard kitchen, in the company of foundation members and industry professionals. Notable past chefs included Daniel Boulud, Emeril Lagasse, Nobu Matsuhisa, Jacques Pepin, and Charlie Trotter. The guest chef dinners raise money for programs ranging from culinary scholarships, to education conferences, to industry awards.
The James Beard Foundation is a national not-for-profit organization. It was started to honor chef and author James Beard with the mission to celebrate, preserve, and nuture America’s culinary heritage and future. Their annual Beard awards are considered the highest honor for food and beverage professional working in North America.
