SPOKANE, Wash. – More people are adopting a gluten-free diet, but one local woman said Spokane doesn’t give gluten-free eaters enough options. So, she opened Spokane’s first 100 percent gluten-free bakery.
Fusion Flours has a very extensive gluten-free menu: selling cakes, specialty pizzas and ready-to-bake lasagna.
When owner Tara Wright was diagnosed with autonomic failure about 10 years ago, she started perfecting gluten-free flour recipes. She’s been selling her bulk flour mixes to Spokane restaurants and grocery stores for a few years, but she said Spokane needed a storefront with ready-to-go gluten-free foods.
“I feel like it’s an under-served market,” Wright said. “There’s so many people that need it and I feel like they’ll find us.”
Fusion Flours opened last week across from Northtown Mall on Wellesley.
