Old automotive warehouse now home to Spokane's 'Arctos Coffee'

The roastery started in a garden shed, but it didn't take long for owner Jason Everman to discover his passion was much bigger.

SPOKANE, Wash. – The old Williams Automotive building on Hamilton Street is now home to Arctos Coffee.

Owner Jason Everman is a science teacher, but also has a love for coffee. He started roasting coffee in his garden shed, but quickly found his passion for the process was much bigger.

It was then Everman started looking into commercial properties to open a bigger roastery and café. He already owns Grind Central Espresso on East Trent, but wanted to tack on a new project.

Everman found the old automotive building and refurbished it into a sit-down café where visitors can watch the roasting process as they enjoy their piping hot lattes. He said he is more than willing to talk about the roasting process with curious coffee-drinkers.

“The minute you walk in the front door, you walk past the machine that’s roasting the coffee,” said Everman. “A lot of times, I might be there actually roasting the coffee, so customers stop, they watch, and ask questions and I’m very open to discussing and talking about what’s going on.”

Everman said he loves being able to hand a cup of joe over to customers and start their day the "right way."

The name of the shop comes from two of Everman’s other passions: science and the outdoors. He said he has always had an affinity for grizzly bears. “Arctos” is the scientific name for grizzly bears.

Arctos Coffee is located at 1923 N. Hamilton Street. It's open Monday through Friday from 6 a.m. to 7 p.m., Saturday from 6 a.m. to 6 p.m. and Sunday from 7:00 a.m. to 6 p.m.
