I kicked off my 2010 BBQ Forecast on the Thursday before Memorial Day. I've been doing this forecast for about 18 years and I forecast what is the best day to get out in the backyard and grill for family and friends. I also post my latest recipe on line here with my blog. Here's the recipe for what I call "Real Deal Tacos" and what really makes this is the fresh salsa that you serve over the meat.
Get a couple of steaks (cheaper cuts are okay)
1 cup prepared tomatillo salsa or salsa Verde
1/3 cup chopped fresh cilantro
2 tbsp fresh lime juice
2 teaspoon minced garlic ( I use garlic in a jar)
1/2 teaspoon salt
Mix all together. Feel free to add more lime juice, cilantro, lime juice, salt and pepper to taste.
combine marinade in seal bag with meat and let marinate up to 2 hours.
3 large diced tomatoes
1 diced medium onion
1/2 of a lime juice
1/2 teaspoon minced garlic (out of a jar is fine)
1 teaspoon salt
2 green bell peppers
1/4 bunch of cilantro
Mix all together and feel free to add more lime juice, salt and cilantro to taste. The lime juice and cilantro really make this.
Warm on Grill corn or flour tortilla (the small kind 6"-7" in diameter)
Put meat on tortilla and top off with salsa and maybe a little more cilantro.
