It makes a great appetizer and sounds like you did a ton of work.  Talking about Chicken kabobs and Peanut Dipping Sauce.  If you take advantage of store bought marinade and dipping sauce this is truly easy to make.  Like a said go to the ethnic section aisle of your supermarket and pick out a bottle of peanut marinade. Also get a bottle of peanut dipping sauce.  I also used frozen chicken tenders that were already cut in the right lengths.  If you want you can buy fresh chicken breast and cut into strips.  Defrost the chicken tenders and put in a bowl or bag with the peanut marinade.  Let sit for a couple of hours in the refrigerator.  Put on skewers and grill.  Serve with peanut dipping sauce.  WARNING some are pretty spicy so warn guests.  I also served mine with an Asian salad that came right out of the bag with the dressing.  Tasty and fresh.  There was enough food that it made a nice meal.  Enjoy.
