TOM SHERRY: London Broil for the grill

Last Thursday (July 10) my barbecue was canceled quickly as we became aware of the fire spreading in the Spokane Calley. We correctly elected to go to continuous coverage lasting seven hours.

Tonight all was well in the river city so I headed out to the backyard and grilled some London broil steaks. After slicing them thinly I served them drizzled with blue cheese dressing. Delicious! Also served grilled peaches with vanilla ice cream. Here's the recipe.

Cover London broil steaks with Tom Steak and Hamburger Rub (Available at Trading Company stores and all profits go to the Northwest Autism Center).

Grill steaks on high, watch that you don't over cook. London Broil tastes better medium to medium rare (Keep some pink in that meat).

Thinly cut meat and serve with blue cheese dressing drizzled on it.

Grilled peaches. Cut in half and remove pit. Put some brown sugar in the pit and on the peach. Grill cut side up until peach softens and sugar melts. I think it helps to close the lid and bake them. Serve with vanilla ice cream.
