I've kicked off my BBQ forecast on television. It runs from Memorial Day weekend through Labor Day weekend and airs on Thursday at 5 and 6 pm. I really do grill for the crew here at KREM. Most of the time I have a hit but occasionally I miss. I go to great lengths not to just do the standard fare of hot dogs and hamburgers. At the same time I really don't like to spend a lot of time doing prep work so I think my recipes will appeal to most folks that don't have a lot of time but want to cook something good. Thursday June 4th I cooked Black and Blue chicken. Here's the recipe.
Get prepackaged salad greens and add tomatoes, red onion, toasted almonds and crumpled blue cheese. Drizzle over the salad a Dijon vinaigrette. Yes its better if you make your own but I use store bought because its faster and easier.
Get 4 chicken breasts wash, pat dry and spray or coat with some olive oil. Sprinkle liberally with a blackened seasoning OR my Tom's Original BBQ Rub (available at Trading Company Stores)
Cook chicken until done. The chicken coating will become blackened. Slice against the grain and serve next to the salad. Enjoy.
