New fast-casual Mexican place to open in downtown Spokane
SPOKANE, Wash. – A new fast-casual Mexican-style eatery is slated to open early next year in downtown Spokane.
Cochinito Taqueria is scheduled to open early February at 10 N. Post Street.
Chef Travis Dickinson, of Clover, is behind the project. He said they plan to use a lot of the same fine dining techniques and attention to detail, but instead will be serving up $3-4 tacos instead of $30-40 entrees.
“I love fine dining and I've been doing it for a long time, but I wanted to make a place that my friends can come in…not just for a special occasion,” he said. “I’m trying to do the things I’ve been doing at clover, and over my career…[but] flipping them into something that my friends can easily afford.”
Dickinson said they plan on sourcing their ingredients locally and responsibly. He said to expect 8-10 starter options, then 8-10 taco options on the menu, plus a few bigger plates or combination meals.
